Cold Cranberry-Chicken Salad
Cranberry Chicken Salad

I would like a recipe for cold cranberry-chicken salad. I had this in a
little cafe in Van Buren, Arkansas. It was made with boneless chicken
breast, celery, canned whole berry cranberry relish and sour cream. It
was serverd on a croissant roll with a fresh fruit salad.


Here is one with dried cranberries

Cold Cranberry-Chicken Salad

1 cup mayonnaise
3 teaspoons fresh lime juice
4 cups cooked diced chicken breasts
3/4 cup toasted unsalted chopped pecans
1 cup dried cranberries
3/4 cup chopped celery
2 Fuji apples, peeled,cored,seeded,diced
( I like Pink Lady apples, but you want a crisp apple)
salt and pepper

Mix together.



Cranberry Chicken Salad

2 cups diced or cubed cooked chicken
2 hard-cooked eggs, diced
1-1/2 cups finely chopped celery
1 tablespoon minced onion
1 cup whole cashews
1/2 cup mayonnaise
1-3/4 cups cranberry juice cocktail
1 package (3 ounces) raspberry gelatin

Mix cooked chicken, eggs, celery, onion, nuts and mayonnaise together well
and press into ungreased 8x12-inch pan. Heat cranberry juice to boiling
and stir in gelatin, stirring until gelatin is dissolved. Remove from heat
and chill until it starts to jell. Gently spoon over chicken mixture and
chill in refrigerator overnight. Can be cut into squares and served on
lettuce leaf.
