Hi, Rohn! This is one of my favorite ways to do catfish:
Cajun Pecan Catfish 1 lb catfish fillets 2 Tbsp olive oil 1 Tbsp Cajun seasoning 2 Tbsp lemon juice 1 tsp thyme 1/3 cup finely chopped pecans 2 Tbsp grated Parmesan cheese 1 Tbsp dry breadcrumbs 1 Tbsp dried parsley flakes Preheat oven to 425 degrees. Coat a shallow baking pan with nonstick cooking spray; place fish in pan. Combine oil, cajun seasoning, lemon juice and thyme in a small bowl. Spoon half of the mixture over fish. Add pecans, cheese, breadcrumbs and parsley to remaining oil mixture. Spoon onto fish and spread evenly. Bake 10 to 15 minutes or until fish flakes easily with a fork.
