Sue Kranwinkle ' s Clafouti
(a French cobbler)

3 large apples, peeled, cored and sliced,
juice of 1/2 lemon
1 tablespoon brown sugar
1 teaspoon cinnamon
1 tablespoon rum
1/4 cup flour
1/4 teaspoon salt
2 eggs
2 tablespoons sour cream
1/3 cup milk

Peeled, cored and slice the apples, sprinkle with the juice of 1/2 lemon,
1 tablespoon brown sugar and 1 teaspoon cinnamon and 1 tablespoon rum.
Prepare the apples and set aside. Put the flour, salt, eggs, sour cream
and milk in your food processor or blender and whirl for a minute. Toss a
pat of butter into a medium sized skillet and heat. Pour about 1/4 cup of
the batter into the skillet and let it cook for two minutes. Put the
apples on top, cover with the rest of the batter and stick in a preheated
375 oven for 40 minutes. Serves six.
