Default Corn Cakes

Corn Cakes

1/2 cup frozen corn, thawed
3 cups frozen hash browns, thawed
2 tablespoons scallions, chopped
3 eggs
1/4 cup heavy cream
1 tablespoon unsalted butter, melted
1/2 tablespoon salt
1/2 teaspoon course ground black pepper
1/4 cup shredded cheddar cheese

Combine all ingredients in a large bowl and mix well. Separate mixture
into six 1/2 cup portions and form into patties, roughly 3 1/2 inches
across. Saute in an oil-coated skillet at medium-high heat for 3 to 4
minutes until golden brown. Serve as side dish or appetizer, with a dollop
of sour cream on top.
