Peanut Butter Chocolate Fudge
Potato Candy Potato Pom-poms * Exported from BigOven * Peanut Butter Chocolate Fudge Recipe By :Source: 101 Things to Do With a Potato by Stephani Serving Size :0 Cuisine : Main Ingred. : Amount Measure Ingredient -- Preparation Method -------- ------------- -------------------------------- 12 ounces milk chocolate chips 2 tablespoon milk 1 cup chunky peanut butter 1 teaspoon vanilla 1/2 cup warm mashed potato --unseasoned and not instant 4 cups powdered sugar 1/4 cup chopped peanuts In non-stick saucepan, melt chocolate chips with milk over low heat stirring consistently. Once completely melted, remove from heat. Immediately stir in peanut butter, mashed potato, and vanilla until smooth. Stir in powdered sugar one cup at a time. Press fudge into a lightly greased 8 x 8-inch or 9 x 9-inch pan. Sprinkle chopped nuts over the top and lightly press them into fudge. Cover and chill for 2-3 hours. Cut and serve. * Exported from BigOven * Potato Candy Recipe By : Serving Size :66 Cuisine : Main Ingred. : Amount Measure Ingredient -- Preparation Method -------- ------------- -------------------------------- 3/4 cup Mashed potatoes 1/2 teaspoon Salt 2 pounds Icing sugar 1/2 cup Margarine 1/2 pound Flaked coconut 2 teaspoons Vanilla -CHOCOLATE 12 ounces Chocolate bits 4 ounces Unsweetened chocolate 1/2 whole Cake paraffin Pare and cook potato to make 3/4 cup mashed potato, not seasoned. Add salt. Using a double boiler, place the stick of margarine in it and melt over boiling water. Add mashed potato, confectioner's sugar, flaked coconut and vanilla. Mix well, then turn into a buttered jelly roll pan. Spread evenly. Place in a cool place to harden. When hard, cut into small squares and dip in the following chocolate mixture. Use double boiler. Place paraffin in top over boiling water to melt. Then add the two kinds of chocolate. Allow chocolate to melt. Stir well to mix ingredients. Use a toothpick to dip the potato candy into the chocolate mixture (holding each square above the chocolate mixture after dipping, so that the square drains well). Place on waxed paper to harden. Blend in powdered sugar, 1 cup at a time. Add almond extract and salt. Chill overnight. Use teaspoon to form small balls, dip in melted chocolate bark. Makes about 4 dozen.
