Baked Stuffed Heart
Tonkcats

(8 Servings)

1 beef heart
bread stuffing
1/4 cup flour
1 tsp. salt
1/8 tsp. pepper
2 Tbsp. oil
1/4 cup water

Wash heart thoroughly in water and remove hard parts. Fill heart with
bread stuffing and sew or skewer to hold in stuffing. Dredge heart in
flour to which 1 teaspoon salt and 1/8 teaspoon pepper have been added.
Brown on all sides in lard or drippings. Add 1/4 cup water. Cover tightly
and cook in a slow 300 degrees oven 3 1/2 hours or until tender, adding
more water if necessary. Thicken liquid for gravy.
