Honey Snowflakes

1/2 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon ground cardamom
1 egg
1/2 cup honey
2 cups flour
1 cup whole wheat flour

Icing:
1/4 cup butter, softened
1/4 cup flour
2 teaspoons water

In a mixing bowl, beat the butter or margarine on medium to high speed
for 30 seconds. Add the brown sugar, baking powder and cardamom; beat
until combined.

Beat in the egg and honey.
Beat in as much of the flours as you can with a mixer. Stir in any
remaining flour with a wooden spoon.
Divide dough in half. Cover and chill for 3 hours, or until easy to
handle. For the icing, stir together the butter, flour and water until
smooth.
On a lightly floured surface, roll each half of dough to a 1/4-inch
thickness. Using a 2 or 2 1/2-inch cookie cutter, cut dough into shapes.
Place cookies 2 inches apart on ungreased cookie sheets. Pipe
icing onto unbaked cookies with a decorating bag and writing tip.
Bake cookies at 375ºF for 7 to 9 minutes, or until edges are firm and
bottoms are lightly browned. Remove cookies and cool on rack.

Makes 4 to 5 dozen cookies.
