Vegetable and Dal Masala
(Recipes from the Brigade of Gurkhas Collection) Makes approximately 1 lb 4 oz Dried Chillies 2 oz Coriander Seeds 11/2 oz Cumin Seed 1 oz Turmeric 1 oz Ginger 4 cloves Garlic 4 oz Onions Remove seeds from chillies, soak the chillies, coriander seed and cumin seed in hot water for 5 minutes. Drain, then grind each separately. Peel the garlic and Ginger and grind together. Peel the onion and grind to a paste. Collect all the ingredients together in a bowl and mix thoroughly. Note: This masala is suitable for use in vegetable and dal curries. Quantities of spices may be varied according to taste. This recipe comes from a collection of recipes from the Brigade of Gurkhas (part of the British Army) and is authentic. All recipes in this collection are for serving ten (10) persons.
