This is for Jolene who wanted applesauce. It's real simple.
Pressure Cooker Apple Sauce Apples Sugar Water I must assume that you have a pressure cooker. Peel, core and chop apples. You don't have to chop them small. In fact I always just cut them in half. Put them into a pressure cooker with a minimal amount of water. Less than 1/4 cup actually. Add about 1 1/2 cups of sugar. Bring the pressure cooker up to ten pounds. Keep it at ten pounds for ten minutes. Take off the burner and let it cool or set it in the sink and run cold water over it to reduce the pressure inside. When you remove the lid the apples will be in the same shape as when you put them in. Take a potato masher and run it through the apples. They will simply melt when you stir them. Taste for sweetness and if needed, add more sugar. The fruit is hot enough to cook the additional sugar. Put into hot canning jars and seal. I usually froze mine. It freezes well for up to one year. Be sure to hot bath them when you get them all in the jars and sealed. Of course if you freeze it you can omit all of the canning part. -- Rec.food.recipes is moderated by Patricia D Hill at .
