Pasta e Fagioli
Kevin Crafts There are as many variations on this recipe as there are ways to pronounce it. I have made this many ways but here I have bravely included my personal favorite. 1 tablespoon olive oil 2 cloves garlic, peeled 3 ounces pancetta ham, diced 4 cups chicken broth 2 cans cannellini beans, rinsed and drained 1/4 lb. farfalle pasta Salt and Pepper to taste In a large pot, heat the oil over a medium heat. Add the garlic and pancetta and cook until the pancetta is just crisp. Pour in the broth and beans and bring to a simmer. Remove from the heat and let cool. Puree the soup and season with salt and pepper. Before serving, cook the pasta according to the directions on the package.
