Irish Stew

Serving Size : 1

1 onion, diced
1 lb leg of lamb, diced
1 carrot, diced
1 leek, diced
1 stick celery, diced
1 clove garlic, left whole
1/4 pint red wine
1/4 pint chicken stock
1 bay leaf
100 g cooked new potatoes
1/2 jar sun-dried tomatoes
1 can anchovies
1 Tbsp pesto
button mushrooms
1 Tbsp sugar
1/2 oz butter
fresh parsley and basil
***CROUTONS***
bread, cut into chunks
olive oil
rock salt

Heat a little olive oil in a casserole dish and seal the lamb until brown.
Add the red wine, chicken stock and bay leaf, cover and cook for 11/2
hours in the oven at 150C. In a saucepan, cook the celery, carrot, leek,
onion and garlic and cook thoroughly until soft. Add the potatoes and the
sun-dried tomatoes, anchovies and pesto. In another saucepan,
caramelise the mushrooms with the sugar and butter for 2 minutes. Soak
the bread in olive oil, salt well and bake until crispy and golden.
Combine the mushrooms with the vegetables in a large pot, add the fresh
herbs and cooked meat, season and serve.
