Cheesy Hash Browns For A Crowd

50 slices bacon, cut into 1-inch pieces
5 cups chopped onion
9 packages (16 oz. size) frozen shredded hash brown potatoes, partially
thawed
5 cups chopped green pepper
5 cups shredded Cheddar cheese

If you do not have a large griddle surface, divide ingredients into 5
equal batches for cooking. For each batch; Cook the bacon and onion
together in large nonstick skillet on medium-high heat until bacon is
crisp, stirring occasionally. Add the potatoes and green pepper. Reduce
heat to medium and cook 10 minutes, stirring occasionally. Place in a
lightly pammed casserole dish and keep warm in a warm oven When all
batches are complete to this point; Top with the Cheddar cheese; Place in
oven and increase temp. to 325 and bake until cheese is melted, about 1
-2 minutes Serve hot
