Default Healthy Chicken Fricassee

Healthy Chicken Fricassee

The sherry adds a special flavor to this popular dish. However, chicken broth
can be substituted for the sherry. Serve over rice, mashed potatoes or noodles.

l lb skinless, boneless chicken breasts, cut in strips
1 cup sliced onions
1 cup sliced mushrooms
1 bell pepper, sliced (red or green)
1 l/2 cups chicken broth, fat removed*
1 tsp lemon juice
l/2 tsp dried thyme
l/4 tsp salt (optional)
l/2 cup skim milk
4 Tbsp unbleached flour
3 Tbsp sherry

Spray skillet with non-stick cooking spray. Over medium heat, stir-fry chicken
with onions, mushrooms and bell pepper until chicken is lightly browned. Add all
but the last three ingredients. Cover and simmer for 10 minutes. Meanwhile, in a
covered container, shake milk with flour to prevent lumps. Stir into chicken
along with the sherry. Bring to a boil, stirring constantly until thickened.

Yield: 4 cups (4 servings)
Per serving: 216 calories, 3 grams fat
