Simmer Steak meal for two
Buy a beef steak that is labelled "simmer steak." This steak must be cooked for quite awhile in water to be tender. In a large heavy skillet put simmer steak and cover with water. With lid on, keep temperature on medium checking often to make sure steak is still covered with water. Do not flip steak. When steak feels tender, flip it over in pan, still covered in water. Add more if necessary to cover. Replace lid. Could take up to an hour for steak to become tender. In a frying pan melt a bit of butter (or margarine) and fry chunks of peppers (any colour) and chunks of onion. Sprinkle at least 8 good sized mushrooms with ground pepper before adding them to the frying pan. Fry until tender stirring often. Wash 2 potatoes or sweet potatoes, prick with fork several times and nuke until soft. (about 10 minutes.) Serve steak in center of plate with fried veggies poured over top including any bit of butter still present. Baked (nuked) potato on the side. Garnish potato with sour cream and/or butter.
