Fish Batter
1 cup flour(for dredging) 1 and a quarter cup of milk or beer 1 egg 1 teaspoon melted shortening 1 cup pancake mix salt to taste fish fillets Combine milk or beer, egg, shortening, pancake mix and salt and blend by hand with a wisk for about a minute. Let batter stand about 5 to 10 minutes until thickened. After fish fillets have been cleaned pat them dry with paper towel. Dredge them in the flour and then dip then into the pancake batter mix. Drop fillets into hot oil (about 300 ) in deep fryer. Fry about 2 to 3 minutes. Fish will be a golden brown and float to top when done.
