Onion Soup with White Wine
4 large onions, chopped fine 6 Tbsp butter 2 cans chicken broth (28 ounces total) 1 cup white wine salt & pepper to taste large croutons sliced swiss cheese Melt butter in pot, add onions, cover and cook over very low heat until pureed & soft. Add chicken broth & wine, simmer for 20 minutes. Season with salt & pepper. Pour soup into individual bowls, add croutons & top with cheese. Place under broiler until cheese melts.
