Parmesan Oven-Fried Chicken

3/4 cup fine dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped blanched almonds
1/2 cup sweet cream butter, softened
2 tablespoons minced parsley
1 teaspoon salt
3/4 teaspoon garlic powder
1/4 teaspoon ground thyme
1/8 teaspoon pepper
Chicken (2-1/2 to 3 pounds), cut up

Preheat oven to 375F. In pie pan combine crumbs, cheese, and almonds. In
1-quart bowl blend softened butter, parsley and seasonings. Spread
mixture over chicken; roll pieces in crumbs, coating well. Place chicken
skin side up in ungreased 13 x 9 x 2-inch oven 55 to 65 minutes or until
golden brown and fork tender. Do not cover pan; do not turn chicken.
Yields: 4 servings

Tip: For ease in spreading butter, dry chicken pieces well.
