Grilled Red Snapper In A Spicy Citrus Sauce

Cooking Time: 10-15 Minutes

1 1/2-2 lbs. red Snapper Fillets
4 Cloves Garlic, minced
1/4 cup Orange Juice
2 Tbsp. Grapefruit Juice, fresh squeezed
2 Tbsp. Olive Oil
2 Tbsp. Soy Sauce
1 Tbsp. Lemon Juice, fresh squeezed
1/2 tsp. Hot Pepper Sauce - or to taste
Black Pepper, freshly ground - to taste
Salt - to taste
Fresh Parsley, chopped - as a garnish

Combine all ingredients except fish and parsley to make marinade; allow
red Snapper Fillets to marinate in sauce (30-60 minutes) in refrigerator.
Remove fish from marinade and place on a lightly oiled barbecue grill and
cook (10 minutes, per inch of thickness of fish), or until the flesh is
opaque, brushing frequently with Spicy Citrus Sauce. Serve hot, right from
the barbecue. Servings Per Recipe: 4-6
