Default Lauretta's Fried Fish and Onion Rings

Lauretta's Fish Batter

Make a cornbread batter from scratch or mix. If using Jiffy mix, use
two mixes, Prepare cornbread batter according to instructions on
whatever your using. Add 1 extra egg and 1/2 cup more milk to batter.
Let sit for 15 minutes. If batter becomes to thick, add alittle more
milk to have a medium thick batter.

Prepare your fish fillets by gently rinsing in cold water. If you have
time, soak your fish in heavily salted ice water for 1 hour. Have your
deep fryer ready to fry fish. I like it at 360 to 370 degrees. Drain
fish and gently pat dry with papertowels. Roll fish in loose flour you
have seasoned lightly with salt and pepper. Dip fish in batter, letting
excess drip off. Put immediately into hot oil. Repeat with several
more pieces. Do not crowd fish when frying. Tur over gently with
tongs, I like to remore fish from fryer with large slotted spoon. Drain
on papertowels. Keep warm in oven until you have cooked all the fish
and onion rings.




Munchy Onion Ring Batter for Onion Rings to go with Fish

3 or 4 large Onions
1/2 tsp. Salt
1/2 tsp. Sugar
1 Egg
1 cup Flour
1/2 tsp. Baking Soda
1 cup Buttermilk
Extra Flour for Shaking Onions in

Slice onions at least 1/4" thick. Separate into rings. Soak in ice
water at least 2 hours before frying. Drain and dry onion rings on
papertowels. Put a few onion rings in a bag containing flour and shake
to coat. Shake off excess and lay on big tray or platter. Repeat until
you have all the onion rings coated with flour. Mix together the 1 cup
of flour, 1/2 tsp. Salt, 1/2 tsp. sugar, 1 egg and 1 cup of buttermilk.
If I were you, I would double this batter recipe. Dip onion rings a few
at a time into batter and let some of the excess drip off. Fry in sme
oil you fried the fish in. Fry in small batches stirring some until
onion rings are golden brown. Remove with slotted spoon onto
papertowels. If you try to fry to many onion rings at once, they will
stick together and come out in a big blob of stuff. These are
wonderful.

Fix some cole slaw and garlic bread with this and you will have a feast.
