Minted Pepper Pickled Onions
4 large brown onions,sliced thick 2-4 (2 is nice, 4 gives it kick) tablespoons coarse black pepper or lightly crushed black peepercorns 3 teaspoons dried mint 2 cloves crushed garlic 1 litre white vinegar In a large jug mix together the pepper,mint,garlic and vinegar. Put the onions into two 1/2 litre sized (sterilized) jars. Pour vinegar mix over the onions, seal and leave to rest for at least 2 weeks.
