Sweet and Sour Red Cabbage with Apples

Recipe By :ALDO ZILLI'S Perfect Accompaniment
Serving Size : 4

1 small red cabbage
1 large cooking apple -- peeled, quartered, cored and
thickly sliced
Juice of 1/2 lemon
1 onion -- peeled and sliced into wedges
50 grams brown sugar -- (1-3/4 oz)
6 Tbsp red wine vinegar
1 Tbsp balsamic vinegar
1 bay leaf
25 grams butter -- (l oz)
Salt and freshly ground black pepper

Quarter the cabbage, remove and discard the root and thinly slice the rest
Put in a large bowl. Mix the apple with the lemon juice and add to the
cabbage with the onion, sugar, vinegars and bay leaf Mix well, cover and
leave to stand for two hours Pre-heat the oven to 170 C/325 f/gas 3
Transfer the marinaded cabbage to a casserole dish, dot with the butter
and season with salt and freshly ground black pepper. Cover with a tightly
fitting lid and bake for 90 minutes until the cabbage is very soft Adjust
seasoning if necessary and serve
