Default Lemon Fire Crisps

Lemon Fire Crisps

1 cup (2 sticks) butter or margarine, room temperature
1/2 cup sugar
1 tablespoon lemon juice
2 tablespoons grated lemon peel
1 egg
2 1/4 cups flour
1 teaspoon cayenne powder
1/4 teaspoon salt
1/4 teaspoon baking powder

Preheat oven to 400 degrees. Cream the butter and sugar until
light and fluffy. Add the lemon juice, lemon peel, and egg and
beat well. Sift the dry ingredients together. Beat into the butter
mixture. Place the mixture into a cookie press, and force the dough
onto an ungreased cookie sheet. Bake for 8 minutes or until cookies
are lightly browned.

Yield: 6 dozen
