Default Picante Meatball Heroes

Picante Meatball Heroes

2 1/2 cup picante sauce
1 lb. ground beef
1 cup finely crushed tortilla chips
1 egg, beaten
6 long hard rolls or hoagie sandwich rolls, split
Shredded lettuce
1/2 cup shredded Cheddar cheese

Preheat oven to 350 F.
Mix together thoroughly 1/2 cup of the picante sauce, beef, chips and egg.
Shape firmly into 18 (1 1/2-inch) meatballs and lay them on a baking sheet
with sides. Put in the oven and bake 10-15 minutes, or until meatballs are
just cooked through. In the meantime, warm up remaining picante sauce
in a skillet and heat to a simmer. When meatballs are done, put them into
the skillet with the salsa, cover and let simmer for 10-15 minutes.
Serve in split rolls, with lettuce on the bottom, then 3 meatballs per
roll and cheese on the top.

Makes 6 servings.
