Pork in Cider Sauce
Yield: 4 servings 1 pound boneless pork, cut into bite-size strips 1 Tablespoon shortening 2 cups apple juice or cider 1/4 cup grated onion 8 teaspoons cornstarch 2 Tablespoons brown sugar 1 teaspoon salt 1/2 teaspoon cinnamon 4 Tablespoons cider vinegar 2 medium apples, cored and coarsely chopped 2 cups or more hot cooked rice In large saucepan or Dutch oven, brown pork strips in shortening. Drain off fat; be sure browned bits are left in pan for flavor. Add 1 cup of the cider and the onion. Bring to a boil. Reduce heat; cover and simmer about 40 minutes or until meat is tender. In a bowl combine cornstarch, brown sugar, salt and cinnamon. Blend in remaining cider and vinegar. Add to pork mixture along with apple. Cook and stir until mixture is thickened and bubbly.
