Default Pork in Cider Sauce

Pork in Cider Sauce

Yield: 4 servings

1 pound boneless pork, cut into bite-size strips
1 Tablespoon shortening
2 cups apple juice or cider
1/4 cup grated onion
8 teaspoons cornstarch
2 Tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon cinnamon
4 Tablespoons cider vinegar
2 medium apples, cored and coarsely chopped
2 cups or more hot cooked rice

In large saucepan or Dutch oven, brown pork strips in shortening. Drain
off fat; be sure browned bits are left in pan for flavor. Add 1 cup of the
cider and the onion. Bring to a boil. Reduce heat; cover and simmer about
40 minutes or until meat is tender.

In a bowl combine cornstarch, brown sugar, salt and cinnamon. Blend in
remaining cider and vinegar. Add to pork mixture along with apple. Cook
and stir until mixture is thickened and bubbly. Cook and stir 2 minutes
more. Add salt and pepper to taste. Serve over rice.
