Default Pumpkin Roll

Pumpkin Roll

3 eggs
1 tsp. baking soda
1 cup sugar
2/3 cup solid pack pumpkin
1/2 tsp. cinnamon
3/4 cup flour

Line a jelly roll pan with wax paper. Pour mixture over paper & bake on
375 degrees for 15 minutes. Turn out on a cup towel that has been
sprinkled with powdered sugar. Remove wax paper & roll up to cool ( leave
the towel on the cake- it will be inside the roll ).

Filling:
8 ounces cream cheese, softened
2 tablespoons,margarine at room temperature
1 cup powdered sugar
1 tablespoon vanilla

Unroll the cooled cake. Spread filling, sprinkle with finely chopped nuts,
and reroll ( do not roll cup towel with cake this time ) Cut off ends if
they are unattractive. Sprinkle with powdered sugar to garnish. Freezes
well.

good.
