Honey Cake

3 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon powder
1/2 teaspoon allspice
1/4 teaspoon ground cloves
1/2 teaspoon salt
4 large eggs, beaten
1 1/2 cups white OR brown sugar
1 1/3 cups honey
1 cup strong coffee
1/4 cup vegetable oil (even extra light olive oil)
2 tablespoons brandy
1 tablespoon grated orange peel
3 cups finely chopped apples
1 cup chopped raisins or dates

Mix dry ingerdients. Mix wet ingredients. Mix fruit and orange peel.
Combine wet and dry. Fold in fruit. Bake in loaves or pans about 1 hour
or tested done at 350F. Dense, moist and fruity!
