Default Colombian Coconut Rice

Colombian Coconut Rice

(serves 8)

1 coconut peeled and grated, you can also blend it.
1 tablespoon of sugar
1 teaspoon of salt
2 cups of rice
2 1/2 water or coconut milk
1 cup of raisins

After de coconut has been gratened with a colander and with your hands
squeeze the juice out of it wich will be the milk, once you squeezed all
the coconut place the milk on a pot at medium heat and let it boil, add
the salt and sugar and live it dry but keep stirring until it looks like
is burning or turns brown to that add water or coconut milk if you have
some left, the raisins and the rice , when the rice has dried up all the
water set it on low heat and stirr then put the lid on the pot and leave
it on for about 8 minutes.

This is so delicious, you can eat it with kidney beans, baked chicken or
beef.
