Cut our first asparagus of 2010 this morning. Lightly steamed, placed
on a slice of toasted homemade whole grain bread and topped with a poached egg. When cut, the egg yolk serves as the sauce. Over the next few weeks we'll be eating our fill along with blanching, vac-packing and freezing the bounty. Asparagus from the freezer in the middle of winter is pretty good but, nothing beats cutting and enjoying the first asparagus of spring. It's one of the few joys of having winter. Ross.
