Saturday's Follies
 
"When we last left Barb, she was mumbling about pickled boiled dirt
chunks and ill-fated corn relish, tossing the corn relish and remaking
it. Let's join her now."

Hi there! It's me, Addlebrained Barb. Honest to Alex, I think I'm
suffering from an overdose of vinegar fumes.

Up at 7:30, I went to the farmers market to pick up corn for the *second
batch of corn relish and more cukes for the third AND FINAL batch of
B&Bs. Corn, check; green pepper, check; onions, check; red pepper, go
to Cub, cider vinegar, go to Cub. Went to Cub and came home. I had
company for lunch and prepped for that. I had a 3:30 appointment that
was going to take a couple hours so I couldn't get the cukes going
(timing wouldn't work) until later, but, hey, I could start prepping the
corn relish. Carefully diced the peppers and put them into a bowl. FF
to post-appointment: Throw some supper together and get the cukes
going. Waaal, I forgot that those peppers were supposed to be for the
corn relish and I layered them in with the cukes and onion and ice and
salt. . . . I realized the error after I had the second layer of cukes,
salt, and ice on top. Screw it -- I'll make the corn relish next week,
and I'm taking the corn with the to The Lake tomorrow. Corn on the cob
comin' right up.

Just took 7 pints of B&Bs from the water bath and am about to do a
couple jars of apricots. I wonder how I can screw that up. . . .

LOL! sounds to me like a serious case of "too many things on the go" ,
Barb. I'd prescribe "take a break" or "one thing at a time", or "gin and
tonic" but I doubt you'd listen to me, I've been stricken by this disease
once or twice too....

You need a vacation from preserving. At(ahem)our age, we often need a
break from all that intense remembering and sequencing.

I've already mailed you the high/low point. . . .

Two-three days of floating in lake water did a lot for me. The kid is a
little fishy. And it's good to be home. We went to:

Bring your apricots on down to visit again on 08/06. We're off to
Crystal Beach, Texas (on the Bolivar Penisula) to spend a week with the
descendants and frolic in the muddy waters of the Golfo de Mexico, do
some salt water fishing, beach combing, and pigging out. Would rather go
on down to Corpus Christi, TX area where the water is blue and the sand
white but that's a nine hour drive and Crystal Beach is less than two
hours. Taking lots of home preserves, etc. Going to be barbecuing,
grilling, making gumbo, etouffe, and probably dirty rice and jambalaya.
Got a big ham, several racks of ribs, jerked pork, ten lbs of good
sausage to grill, all the goodies.

Y'all have a real nice time, looks like the weather should cooperate. I've
been thinking about pickling fish, as we're adding more fish to our diet so
we can liver [sic!] awhile longer.

I think we could live on fish quite easily. Back when I fished at least
once a week we would have pounds of fish fillets in the freezer. Kids
and us never got tired of it. Same with venison.

I've recently broken out the fishing tackle that hasn't been used since
about 1987 and started fishing again. Lots of free places to fish around
SW Louisiana and even over in Texas (have a lifetime Texas hunting and
fishing license) so we're eating more fresh fish than before. Don't know
how much longer we will live eating fish but it will certainly be enjoyable.

If the family cancels on you, bring Miz Anne and the groceries on up
here to Colorado. We'd be happy to have you. We're ~900 miles from the
nearest beach, however...but our air conditioning has been repaired.

Take the drying rack and dry some fish.......if you get it flat enough you
can mail it out (VBG).....

Any fresh fish that gets caught gets cooked and eaten right away. Our
kids and grandkids grew up eating fish that we caught and wild game.
They all still like it all.
