Hey Deborah, couple of different things... Tostadas, Fry corn
tortilla flat, spread refried beans, layer with your choice,
guacamole, onions, tomato, lettuce, cheese, sour cream etc...
you can add Chorizo (mexican sausage) to beans make a 7 layer dip,
like a tostada except on a platter (no tortilla) you can add olives to
above...
Bean Dip, Cut corn tortillas in qtrs, fry, let drain add seasoned
salt. add chorizo to refried beans, add some salsa for more of a bite
and some cheese.
Fry some Chorizo and scramble some eggs in the chorizo, side of
refried beans. Hot tortillas...
all this talk of beans, I'm putting a pot on. Do you just like
refried beans or do you like the whole bean? If you also like whole
beans I put a pot to cook, generally takes 3 hours on medium heat. I
also put them in the crock pot before work, when I get home they are
done..... mmmmmm
I clean the beans, add water, add salt, pepper, garlic, cumin. Cook.
while cooking you can add a jalapeno, onion, Beer, tomato.... Gives
it a nice bite.
or you can chop the jalapeno, onion, tomato leave on the side for a
nice crunchy addition to beans.
That's it, i'm putting on a pot right now
enjoy, let me know if you tried or liked anyone of those.
I think if I had to choose I could live on beans and rice.

7 layer dip is excellent... If you plan on using canned refried beans,
don't. An easy substitute for convienience is to use whole pinto beans
in a can and heat them up in a hot greased pan of bacon grease, lard or
olive oil and let them simmer till they are tender then mash them with a
potato masher and stir till the broth boils off. Cool and serve.

Scratch beans cooked with pork is always going to taste better but the
mashing is done the same way.

True! Rice and beans make the perfect base for any meal. Even though I could
afford a T-Bone steak as often as I eat rice and beans, I prefer the rice
and beans. Which, by the way, when the beans are cooked with a hint of lard,
the dish yields about the same nutrient content as does a steak.... so I am
told, and so I believe from experience.

And tostadas! Any way you make them are absolutely the best!
