I plan to make pavlova for my Memorial Day bash, and I made a practice
pavlova yesterday afternoon. I followed LadyJane's recipe, and I *think* I
got it right: Is it supposed to be crisp on the outside, marshmallowy
inside, and sunken in the middle?

That sounds pretty good Bob!
The depression in the middle is to hold the cream topped with
strawberries, pineapple, banana or fruit of your choice.
I am sure your guests will be very impressed.
