Unbelievable "guacamole"
 
I happened to look at the ingredients on Marie's prepared guacamole. I
was flabbergasted. Avocado is the main ingredient of guacamole, right?
It wasn't even 2nd or 3rd but 7th in the ingredients list!! Leading the
pack were water, soy oil, palm oil, dry milk, and a couple of other
things.

I can only imagine how it tastes.

pan fried steak. Sounds excellent. What is the reason for 'tenting'
with aluminum foil after the steak is plated?

Jeez....I'm surprised they're legally permitted to call it guacamole. It's

Why would any normal brained person buy prepared guacamole - duh -
that's like ordering the meat loaf.

An excellent guacamole can be prepared using no avocado whatsoever...
with asparagus.

The average American consumer gets what (s)he is worthy of. Guacamole
can only be made fresh, as it gets icky pretty quickly. Ideally, it
should have nothing in it but avocadoes, fresh-squeezed lime (or lemon
in a pinch) juice, raw garlic, salt, and possibly a bit of powdered
chiles, though I think even that should be left to the discretion of
each person. It shouldn't have anything else mixed in.

On the side, it is nice served with finely diced tomatoes, chopped
onions, chopped cilantro leaves, Mexican style sour cream, and/or
prepared red chile. Shakers of salt and powdered chiles are a must.
It should be served in a bowl that's large enough to add any or all of
the sides. It's fun getting to mix in whatever you like.

The best restaurants usually serve guac that way, though I've found I
usually have to ask for the chile powder. Sometimes I think I should
never leave the house without my own in a small bottle.

One of my friends made guac the other day, and she loaded it with
cilantro. I found it inedible. That was OK though, because the green
salsa my nephew had made kept my interest.

Most food companies will test these things with focus groups. This
particular product really makes me wonder what those people looked like.
Probably the same target group for products like Velveeta.

I have never found a pre-packaged guac that tasted anything but
horrible.

Unbelievable "guacamole"
 
A real Guacamole is made only with avocado, chopped onion, cilantro,
tomato, chile verde and salt.

In Mexico, we never add lemon juice because it tastes different. A
Guacamole should be prepared and served at once with torillas or
totopos.

It can be served as a snack or as a side dish.

Yes, and it's good... I like it better than with avocado. But I cheat,
I use full fat yogurt and even add a little mayo. It's good with a
couple of hard cooked chopped eggs folded in.

Anyway, it's nothing new... I've posted this asparagus guacamole
several times.

They do exist. Whole Foods has a pre-packaged guacamole that is quite
good. The ingredients lists reads just as it should. I think it is made
fresh in the store. Expensive! About $10 for a pint.

Heh, I've made Joan Lunden's low fat take ... cucumber replaces
some of the avocado. I like it. I know, much gnashing of teeth
will greet that idea.

I bought some guacamole at Costco, I like it. Avoclassic. As far
as Only fresh will do!, I'm happy for everyone else who has ripe
avocados at every turn, I like to make something using guacamole
that doesn't involve waiting for them to ripen. I prefer fresh, but
there is pretty good store bought to be found. Wegman's has a
good brand, too, not sure if it's Avoclassic.

Nancy, I've used the ready-made guacamole at Costco, too. I believe I've
even frozen a couple of the separate packages, but I can't recall how it
turned out.

Timing on ripening of avocados is a pain. I've been doing pretty well for
the past several years on Costco's regular, separate avocados, and keep them
stacked in the ripening stage just like I do their bananas (although I find
their bananas not as consistent as their avocados). Usually I try to buy 3
packages of bananas in various stages. I buy 4-5 avocados in a pack, then
perhaps when half of my avocados are gone, I will buy some more. But I'm
not always able to go often enough to do this.

I was unable to go to Costco for a while, so I bought 2 the other day at one
of the local supermarkets - EGAD I hate going there -- but they were both
rotten, rotten, rotten -- I knew it! I knew it! I knew it!

I'll try Wegman's avocado the next time I get there -- on my list; thanks.

I just looked at the package a little bit ago, it says it can be
frozen. It's three separate packages.

It is a pain. (laugh) Eloquent, I know. It's just a pain.

Exactly. I've tried, they just won't soften, stay hard as rocks, then
suddenly
they are rotten. I just haven't had any luck, the last couple years.

I want to make sure you know I mean guacamole, in case I said
it wrong. It was in two vacuum packs within a cardboard package.
It was very good. Surprisingly good.

I haven't checked prices recently, but as of several years
ago frozen guacamole (produced in Mexico) was much less expensive
than the equivalent number of avocados. At the time, pre-NAFTA,
it was forbidden to import fresh avocados into the U.S.

For a Food Snob, only fresh will do. For the rest of us, the Costco
stuff is pretty good. I'd rather have fresh, but as you say, the
avacodos aren't always ripe when it is guacamole time.

There seem to be two main paths to take with guacamole. One is the
simple, as above, that emphasizes the avocado. I do as above most
often, but with a bit of minced serrano chile, not powdered. The other
path is to make what I think of as an avocado-based salsa. A typical
version would be this, from Diana Kennedy, recently reprinted in the
L.A. Times:

2 TB minced white onion
3 serrano chiles, seeded, minced
4 TB cilantro, roughly chopped
3/4 tsp salt, or to taste (but don't leave it out)
3 large avocados or 4 small
4 oz. ripe tomatoes, finely chopped
1 TB fresh lime juice

Grind the onions, chiles, cilantro and salt to a paste in a molcajete
or mortar and pestle. Spoon avocado in and mash (but leave some lumps).
Stir in tomatoes and lime juice. Taste for salt and lime, garnish
with more cilantro leaves. -aem

No! Just cut it up smallish, seed it I think maybe. Been
a while. It has a little fresh taste to it that is pleasant.

I'd make fresh guacamole all the time if I could find avocados at a
decent price.
Here in NY the ones that are best for making it are the little dark
green ones, Hass(sp?) avocados.
In my local supermarket they sell for around $2.00 each!!!
Yikes!
I have actually found a couple of brands in tubs that are not too bad.
Whole Foods store made brand is actually very good, among others.
I am originally from TX, and I know what good Guac is supposed to be.
But, there are many variations on the recipes.
Personally, I don't like tomatoes in mine.

He's posted the recipe before and I tried it once. As you might
expect, it tastes like tarted up, mashed asparagus. Not bad for an
unusual chip dip, as long as you don't expect it to taste like
guacamole. -aem

I don't care a lot for tomatoes in guacamole -- if I do add any, it'll just
a small cherry tomato for extra liquidity.
Costco avocados run around $.85 to $.95 a piece; grocery stores around $1+
to maybe $1.25.
I could hardly bring myself to pay $2 for one, but I guess I will be doing
it before long.
I will not pay $3.49 for tomatoes yet, though. No matter how good they look.
I'll just whip out a can or jar of tomatoes.
DH has planted some tomatoes for summer. But that really spoils you for the
rest of the year.

Dee Dee, we never put any lime or lemon juice to a Guacamole, these
juices act as antioxidant for the Guacamole, but if you prepare it just
before serving, you will find that it tastes batter without lime or
lemon.

Alex, I eat avocado 9 times out of 10 right out of it's 'shell.' I
sometimes sprinkle a little of that schricka (sp?) hot sauce on my plate and
dip my fork/spoon in it if Iwant a little added hot.

I used to make guacamole this way most of the time; a little lime, a little
onion, a little hot (jalapeno or whatever), a little fresh tomato, a little
cilantro. DH would prefer it this way, but he's coming around to eating it
right out of the shell.

If I have 3 or 4 ready-to-go, I will smash them up, add some lime as they
will not be eaten fast enough. I don't save left-overs, though.

Yeah, that's what I was getting at -- you have to read between the lines.
You did good!

"As a matter of fact" I don't recall ever having leftover guacamole or
avocado.
But after eating all that fat in order not to have left-overs, about 3 in
the morning, it would be certain to cause a strong spasm!
