Got my 18 qt. PIAZZA stock pot out... I'm ready.

Ingredients:
4 packages corned beef (17 lbs)
2 large cabbages
5 lbs Red Bliss potatoes
3 lbs carrots
1 large onion.
Loaf of real Jewish rye (seeded) imported from Brooklyn.
Spicey brown mustard (home made)
Genesee Cream Ale

Corned beef in the fridge (about 9 pounds total)
2# red potatoes (I might make garlic mashed instead of boiled along with
the beef)
got the carrots and onions already, but I still need to pick up a cabbage.
Killian's for beer, but at least it ain't bud.

We're having reuben sandwiches (with homemade sauerkraut and russian
dressing :>) and maybe soup, too, if I feel industrious, on Friday.

Posting from Ireland...

Yeah, I'm ready - we're having Irish stew tonight (stewing lamb, onions,
carrots, spuds) and beef & Guinness stew with cabbage on the side
tomorrow - I know it's two stews, but tonight we'll be in the pub for a
while (the tourists are arriving in their hordes!) and tomorrow it's the
parade in the village, so again we'll be out for a while, and I'm not
sure how sober I'll be on our return. Not going to attempt cooking
whilst wobbly again - I've made that mistake before!

Breakfast tomorrow will be fried duck eggs, grilled rashers, black &
white puddings and mushrooms - plenty to soak up the inevitable
Guinness! Not sure how successful the parade will be tomorrow - it's
been both sunny and snowy today (though it didn't settle).

Bumped into a friend in the village earlier who told me he's taking his
sheep Baabara and her 2 new lambs into the parade tomorrow - his pigs
are too big this year to take part!

Cooking for a crowd, are you? My corned beef brisket is a mere 4 lbs. I
do have a cabbage but I'll probably not bother with potatoes and all the
other stuff.

Actually just four people. Cooking for a neighbor family just across
town, they're definitely Irish, heavy brogue and the name Flannigan...
they moved up here from NYC too. Unfortunately the husband has been
diagnosed with the big "C" and hasn't much longer, this will be his
last. I asked, and the lady of the house said they'd love it but he
was not up to company so I will deliver their dinner, stay five minutes
and depart.

I only make corned beef once a year so always make lots, it shrinks ya
know. And if I'm going through the trouble I have to have lots of
LOs... corned beef platter for two days, corned beef sandwiches for two
days, the rest for my favorite, corned beef hash. I have three loaves
of imported rye in my freezer, anyone visits from NYC who asks what can
they bring I tell them real rye and real bagels.

sure they hadn't become vegetarian after a week with their

Don't eat meat, so can't do corned beef. So my traditional St Pat's
meal - not highly authentic, but close - is mashed potatoes, mustardy
braised cabbage, and morningstar veg sausages. This year I've added a
casserole of scalloped root veggies, using turnips, parsnips, and
kerrygold cheese. Guiness alongside.

corned beef sandwich if I want one tomorrow, and DH doesn't eat it, so
I'm not going to bother to cook any.

I do have some Murphy's though.

I am cooking Dublin Coddle and Soda bread. Also making a pistachio cake
(not Irish but green) As for the drink - soda with dinner, if I am
lucky I'll have an Irish coffee or perhaps some Baileys after the girls
go to bed. No beer for me ... sorry :P

I'm having a cb&c platter at the local "homey" restaurant. There would be
far too many leftovers for my WW regime if I cook it at home, and I do not
like it after it's been frozen.

We're doing ours belatedly to be able to bring it into the office for lunch,
on Tuesday. With DH having the work schedule that he does... Tuesday will
be St. Patty's Day for us.

Our menu is:

Corned Beef n'Cabbage that I'll begin corning tomorrow.
Colcannon
Killian's Carrots
Roasted Parsnips
Irish Soda Bread
Tea Cakes for dessert
Un/Sweet Tea

I can hardly wait! With Thanksgiving being my favorite meal time, this
comes in immediately following!

We're doing a Beef and Guinness Pie tomorrow for the two of us,
followed by a two-days-after-the-fact party with friends (schedule
conflicts):

Beef And Guinness Pie

meats and poultry

2 lb boneless beef chuck; cut into 1 inch pices
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1 large onion; coarsly chopped
2 garlic cloves; chopped
3 tablespoons water
1 1/2 tablespoons tomato paste
1 cup beef broth
1 cup guinness or other irish stout
1 tablespoon worcestershire sauce
2 teaspoons drained brined green peppercorns; coarsly chopped
2 fresh thyme sprigs
puff pastry
1 large egg; lightly beaten
1 tablespoon water

Special equipment: 4 (14-oz) deep bowls or ramekins (4 to 5 inches
wide.

Put oven rack in middle position and preheat oven to 350°F.

Pat beef dry. Stir together flour, salt, and pepper in a shallow dish.
Add beef, turning to coat, then shake off excess and transfer to a
plate. Heat oil in a wide 5- to 6-quart ovenproof heavy pot over
moderately high heat until just smoking, then brown meat in 3 batches,
turning occasionally, about 5 minutes per batch, transferring to a
bowl. Add onion, garlic, and water to pot and cook, scraping up any
brown bits from bottom of pot and stirring frequently, until onion is
softened, about 5 minutes. Add tomato paste and cook, stirring, 1
minute. Stir in beef with any juices accumulated in bowl, broth, beer,
Worcestershire sauce, peppercorns, and thyme and bring to a simmer,
then cover and transfer to oven. Braise until beef is very tender and
sauce is thickened, about 1 1/4 to 1 1/2 hours. Discard thyme and cool
stew completely, uncovered, about 30 minutes. (If stew is warm while
assembling pies, it will melt uncooked pastry top.)

Put a shallow baking pan on middle rack of oven and increase oven
temperature to 425°F.

Divide cooled stew among bowls (they won't be completely full). Roll
out pastry dough on a lightly floured surface with a lightly floured
rolling pin into a 13-inch square, about 1/8 inch thick. Trim edges
and cut dough into quarters. Stir together egg and water and brush a
1-inch border of egg wash around each square. Invert 1 square over
each bowl and drape, pressing sides lightly to help adhere. Brush
pastry tops with some of remaining egg wash and freeze 15 minutes to
thoroughly chill dough. Bake pies in preheated shallow baking pan
until pastry is puffed and golden brown, about 20 minutes.

Reduce oven temperature to 400°F and bake 5 minutes more to fully cook
dough.

Cooks' note:

Stew (without pastry) can be made 2 days ahead, cooled completely, and
chilled, covered. Bring to room temperature before using.

I couldn't even pull myself together to buy a bag of precut cabbage to
turn into cole slaw for the potluck tomorrow. I was tired and it was
raining buckets on the way home, so I didn't feel like going to the
grocery store. I decided that a plate of green onions and carrots
would cover both sides of the Irish issue neatly, but my green grocer
is on the side of the street that flooded tonight. Believe it or not,
the sewer system was shooting water onto the street, not taking it off
and that side looked like a raging river....

If I am not lucky - I will have tea I suppose
I haven't had a chance to get to the ABC store without the kids (I won't
take 'em in there on principle) so I am sans liquour in the house...I do
have some red wine. It's not Irish but it may be ok
