So, I was at the farmer's market in Carlsbad with my Ma yesterday, where I
sampled some artichoke hummus and fell in love! It's quite yummy, and inspiring, apparently, because I decided to use it as the basis for our dinner tonight. I also purchased from the same stand: Sun Dried Tomato Hummus Roasted Garlic Hummus Pita Tzatziki Then, walking a bit further down, we found some "Greek Style" olives. The first thing that drew my attention was hearing him tell another woman "Make sure you don't refrigerate these, even after they're opened." Huh? He told me they aren't bleached, like commercial olives, and therefore need no refrigeration. Tried a couple, and they were quite good, so I bought an 8oz jar. So, here's dinner: Greek Chicken skewers (marinated with lemon, garlic, oregano, and red wine vinegar, then grilled with onions) a HUGE salad with baby romaine, the Greek-Style olives, pepperoncinis, cucumbers, tomatoes, and lots of feta cheese, dressed with Meyer lemon olive oil, red wine vinegar, oregano and garlic, and fresh black pepper Cous Cous with roasted red peppers (diced), and kalamata olives I can't wait til the grill is ready!
