The only suggestion I have is to ditch the Republic of Tea teas and go with
Mariage Freres. The difference in quality is astounding--especially in
side-by-side taste tests. My personal favourite iced is Bolero (even though
it isn't on the recommended list for iced teas) though Aida is also good
iced. Marco Polo is a heavier version of Aida, without as much of a honey
flavour. It's one of their most popular blends, I think. Casablanca (green
tea with Moroccan mint and a hint of bergamot) is on their iced tea list and
would suit your menus, but I actually didn't like it much iced. I much
prefer their floral-fruity blends.

If you're interested in their teas, try www.theculturedcup.com (note: I
have no interest in the company except as a very satisfied customer). They
have the best selection of Mariage Freres teas that I've found on-line
(except for the Mariage Freres site, of course, which can be found at
www.mariagefreres.com but you'd have to use their French or Japanese site
since they still haven't done anything with the English version.). You can
also find descriptions of the teas so you're not buying blindly. They also
have great customer service--very personable and very helpful.

Oh...peach cobbler...I'm imagining soggy peach cobbler. Do you have a good
way of preventing that?
