Default Loaf pan Spinach Three Cheese Lasagna

Spinach Three Cheese Lasagna (4 servings)

4 sheets no-boil lasagne
1 (10 ounce) package frozen or 1 lb fresh spinach
1 small onion, minced
1 garlic clove, minced (1 teaspoon)
1 tablespoon oil
1 cup pasta sauce
1 cup Ricotta cheese
=BD cup shredded Mozzarella
=BC cup grated Parmesan cheese
1 egg
1 teaspoon sugar
[dash cinnamon]
=BC cup shredded mozzarella or 1-2 slices
cooking spray

SPINACH FILLING:
Saut=E9 onion & garlic in oil 1 minute.
Add frozen drained spinach
Saut=E9 until most of the moisture is absorbed, if using fresh, just
saut=E9 until wilted.

CHEESE FILLING:
Blend the egg with the Ricotta, Mozzarella & Parmesan and add cinnamon.

ASSEMBLY
Spray the loaf pan with cooking spray
Pour a few tablespoons of sauce on the bottom of the pan.
Layer 1 piece of lasagne, a third spinach mixture, a third cheese
mixture, another piece of lasagna then spinach & cheese, then repeat.
Top with last slice of lasagna, pasta sauce and Mozzarella.

BAKING
Bake covered with foil for 45 minutes.
Remove cover last 5 minutes to brown.
Let stand 8-9 minutes before serving.
Great reheated!
