Default need some summer dishes to beat the heat

We've been eating lots of already roasted chicken and salad in order to
cut out the cooking because of the heat this summer.

I'd love some suggestions for dishes that don't take a lot of cooking.
We live in the city and don't have a grill. We do have a microwave.

Stirfry works well. Total cooking time is just minutes. There are
number of dishes that adapt pretty well to the microwave, generally
chicken with some sort of sauce is good for that.

I have excellent results microwaving fish. Quick and easy and doesn't heat
up the kitchen. I brush fillets with Italian dressing, cover dish with waxed
paper, and depending on thickness, cook about 5 minutes per pound. (Time
will vary with microwave.)

http://www.adelphiaseafood.com/recipes/microwave1.htm has guidelines a bit
different, though:

Microwave Cooking Guidelines

Fish: Fish steaks or fillets (1/2 to 3/4 inch thick), 1 pound.
Preparation: Rinse and pat dry. In a greased 7 x 11 in. baking dish,
arrange fish in an even layer, with the thick portions toward the outside of
the
dish. Season to taste with melted butter or margarine, paprika, dill weed
or
lemon juice. Cover with heavy duty plastic wrap.
Cooking Time: 3 to 5 minutes per pound. Microwave on high (100%),
turning after 2 minutes.
Standing Time: 3 minutes, covered.

You have my sympathies. I live in the country. I don't think we have cooked
dinner in the oven or on the stove since early May. We use the propane
grill every night and eat on the patio. For dinner tonight I have a small
chicken, just enough for two, that has been split and is sitting in a
marinade of olive oil, lemon juice, garlic, S&P, and oregano. It's just
about time to throw that baby on the grill.

Cold Pasta Salad
Antipasto Platter
Steak sandwiches (fried or broiled)
deli Platter
Stuffed tomatoes with Tuna/Shrimp/Seafood mixture
Chef's Salad
Pasta Primavera ( just use the Pasta Water to blanch the fresh vegetables)
Peal and eat Shrimp with do-it-your-self cocktail sauce (shrimp cooks is just a
very few minutes.
Scampi
Pan seared scallops
Ciopino (heat the sauce, dump in the fish, wait a few minutes and serve)
Creamed Tuna on Toast
Mac & Cheese
Sausages and sauerkraut
Rubin sandwiches

Cold noodles with a dipping sauce. Make the sauce soy sauce based or use
anything that strikes your fancy. Garnish with shredded carrots,
cucumber and maybe some cold tiny shrimp or slivers of meat.

Use a crockpot to cook during the night. Use it outside of the house.
Grill more stuff, Rotisserie chickens on the BBQ, or electric rotisserie
(but outside).

Eat vast quantities of Ice Cream, chased down by Slurpies. Winnipeg, my
city is the slurpie drinking Capital. More slurpies are drunk here per
Capita than anywhere else.

Smoothies and MilkShakes are your friend.
Eat raw stuff...carrots, celery, fruit and cheese etc.

Move to the Artic.

thanks for all the ideas, everyone.

I used to eat bread and cheese with some fruit when I was single. I
don't think I could get bf to do that.

One of the things I miss from my childhood days is the cottage cheese fruit
salads my mother used to serve on hot days, a good dollop of cottage cheese
on a leaf of lettuce, a marchino cherry on the top and some sliced canned
pears on the side, along with a hard boiled egg or deviled egg, some sweet
pickles or gherkins, maybe some salmon salad or tuna salad.

I suppose I could whip one up for myself but we never seem to have cottage
cheese around the house because m wife doesn't like it much, and because
she is a carnivore and doesn't consider anything a proper dinner unless
there is meat on the plate.

Dave, you owe it to yourself to make that salad once in a while, despite
what other food is in the house or being served. Life is much too short to
deny ourselves the pleasure of memories and things we enjoyed in the past.

that's how bf is, but he's come a long way. We eat lots of vegetarian
meals now. I like meat, don't need to have it for every meal.
