I made this really nice chicken salad with some of the left over beer
can chicken. I was playing around and here's what I came up with. whole wheat noodles left over chicken cut into small bite size pieces veggies: chopped red onion finely chopped baby carrots finely chopped celery halved cherry tomatoes cucumber, peeled and chopped into bite size pieces finely chopped radish dressing (my recipe made on the fly): 1/4 c herbed vinegar*: oregano, purple basil, lemon thyme 3/4 c olive oil 1/2 tsp dijion mustard 1/4 tsp lemon zest 1/4 tsp sugar * This stuff is amazing. It is light, airy, flavourful, and very pretty pale pinky purple. |
