Default Chicken Salad


Fried chicken, chicken salad, did I say that right? ;-) Anyway, it's
a chicken salad made with leftover fried chicken. Besides the chicken,
I added diced pear, scallions, celery, diced Monterey jack cheese,
salt and pepper, and just enough mayonnaise to moisten. I added some
julienne cucumber to the corn and bean salad mixture and served that
along side. Rolled the chicken salad up in the lettuce and dove in.
I love the bites of chicken salad that have both the pear and fried
chicken skin in one bite, yummm-o
