Default Broccoli and Cauliflower

Hi to all! I have been away for awhile. My son got married in April ,
everything was beautiful I am happy to say ;-)
I have some Broccoli and Cauliflower that I got on sale 2 for the price of
one and I am looking for a different idea on how to prepare other then with
cheese. I have had some with mayo and butter mixed with seasoned salt. I
need ideas please! !

( p.s. to notbob, I have seen you in the Camaro/Firebird group, do you drive
either one? just curious.

I like broccoli and cauliflower marinated as a salad -- blanch the
flowerettes, cover with zesty Italian dressing, and let it marinate
for a few hours.

This one is quite good and lends itself to experimentation. The
allspice adds a lot provided you make the salad a bit ahead of
time to blend the flavors. I don't think I use as much mayo as
she calls for and I don't use the sugar.

Donna's Prairie Country Salad
Fresh, Flavorful, And So Nutritious
Ingredients:
3 cups broccoli florets, blanched
3 cups cauliflower florets
1/2 cup golden raisins
1/2 small red onion, sliced
6 strips bacon, fried and crumbled
1/2 cup sunflower seeds, toasted
Dressing:
1 cup low fat mayonnaise
1/3 cup sugar
1/4 cup apple cider vinegar
1/4 teaspoon allspice
Blanch broccoli florets in a pan of boiling water for 1
minutes. Chill
quickly under cold running water. Drain and pat dry. In a
large bowl,
combine broccoli, cauliflower, raisins, onions and fried
bacon.
In a small jar, mix together mayonnaise, sugar, vinegar and
allspice. Pour
dressing over salad and toss. Refrigerate for several hours
before
serving. Add sunflower seeds right before serving.
Serves 6 Nutritional Information per serving:
Calories 190
Fat, gm. 5
Protein, gm. 5
Carb. gm. 32
Cholesterol, mg. 5
Fiber high

Hi Tara, your recipe sounds good! And to you Mike, I don't need a reference
to google as most people here do not. We are ALL aware of google. I just
want some good ideas that have been tried here among the group. But thanks
anyhow!

For broccoli: slice/divide it into "spears" and steam it; plunge into cold
water; drain; add to salads. Some like a light steaming; I like the sweet
tenderness of a thorough steaming. In the past 25 years, it's been my main way
of serving broccoli, and the kids can hardly imagine a salad without it, now.

Google could n't find that but this looks similar

Broccoli Cauliflower Casserole

This is a delicious casserole which I make all the time. Broccoli and
cauliflower are my favorite vegetables next to string beans.

1 (16 ounce) package frozen broccoli
cuts or 1 pound fresh steamed
1 (16 ounce) package frozen cauliflower
florets or 1 pound fresh steamed
1 large onion, chopped
2 tablespoons margarine or butter
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil, crushed
1/4 teaspoon pepper
1 1/4 cups milk
2 (3 ounce) packages cream cheese with chives, cut up
3/4 cup soft bread crumbs
3 tablespoons grated parmesan cheese
2 tablespoons margarine or butter, melted

Preheat oven to 350 degrees F.

Cook broccoli and cauliflower according to package directions. Drain
well. Place in a large saucepan. Set aside.

Cook onion in the 2 tablespoons margarine or butter until tender but not
brown. Stir in flour, salt, garlic powder, basil and pepper. Add milk.
Cook and stir until thickened and bubbly. Add cream cheese. Stir until
cheese melts. Stir into vegetable mixture.

Pour into 2 quart casserole. Toss together bread crumbs, cheese, and 2
tablespoons melted margarine or butter. Sprinkle over vegetable mixture.
Bake uncovered for 25 to 30 minutes or until heated through.

To make ahead. Refrigerate unbaked casserole, covered up to 1 day, and
bake as directed or freeze up to 1 month thaw frozen casserole in
refrigerator overnight and bake for 40-45 minutes or until heated through.

To whose kids are you alluding? They must be your present shack-up's little
*******s from previous relationships... 'cause if they were yours you'd have
said "my/our kids", <s>now</S>. So why "the" kids, as though you're
disassociating yourself from the sniveling little buggers.

You don't have trouble with the broccoli turning an ugly shade of
brown-grey? I never marinate green vegetables for that reason. The
cauliflower marinates wonderfully.

Broccoli, cauliflower, rice bake.

2 cups cooked white rice
1/2 cup blanched broccoli chopped
1/2 cup blanched cauliflower chopped
1 cup sauteed mushrooms
1/2 cup sauteed onion
1 can cream of mushroom soup
1/2 can milk
1 cup yellow cheese

mix all together and bake in buttered casserole at 350 degrees until
bubbly on top (about 30 minutes).

May be mixed ahead and baked when needed.

We've had a recent Cauliflower discussion here, with mashed
cauliflower "faux-tatoes" recommended highly. Someone else
said it was delicious sliced thin, brushed with olive oil and
baked until well browned.


Broccoli-Cauliflower Salad 6-8 servings
from Colorado Cache Cookbook

1 small head cauliflower
2 large stalks broccoli
1 small onion, chopped finely
1 c. mayonnaise
1 Tbsp. vinegar
1 Tbsp. sugar

Divide caulflower and broccoli into small bite-sized florets,
discarding stalks. Combine the mayo, vinegar and sugar,
add to vegetables and mix well.

Note: This tastes much better when made at least one day ahead.
It will keep for several days int he refrigerator, sealed tightly.
You may prefer it with your favorite ranch dressing isntead of the
mayonnaise mixture.

You could also make cream of c.soup with a chicken stock base.

Thanks for all of the great ideas. This is the one I will try first only
because I love cream cheese and I have all of the ingrediants.
I was going to make it yesterday but we spent so much time on our
landscaping and getting our patio furniture out that we ate out!
I still have a head of cauliflower and a bunch of broccoli to eat up before
it goes bad. I am actually a bit sick of it by now and and really appreciate
the recipes for a different way to prepare it.
