Default roasting veggies with little oil

I have roasted veggies for years and a lot of the time DH complains
that there is too mch oil. (He's an oil-phobe.) I am drizzling it on,
so I don't think it's an excess, and not much coats the pan, or even
gets *on* the pan. So, is there some way to roast veggies with
extremely LOW amounts of oil? Veggies I usually use are potatoes,
carrots, peppers, onions, zucchini, celery heart and sometimes various
others. Also, I stir my roasted veggies a couple of times during the
proces. Is this the technique others use?

I often do it with no oil at all (which some purist is welcome to tell
me is baking, not roasting). 400F, 45 minutes to an hour, depending on
what I'm roasting, seems to do it, oil or no oil. When I go oil-free,
though, I roast them on foil and don't attempt to turn them -- I accept
that I won't get the crispy bottoms I get with the oil, but sometimes
we're just in the mood for something light.

I do it exactly the same way. Maybe buy an oil sprayer and spray oil?
But really, the amount of oil there *is* minuscule...

Sounds kinda picky to me. I'd go the other route, cook up the next
batch using 50 wt motor oil. Switch back and see if he complains!

Get a spritzer and spritz a little bit of oil over the veggies.

No law says roasted veggies have to be oiled.... they can be sauced
(soy, worcestershire, balsamico, hosein, hot pepper sauces, mustards,
etc.)... or glazed (sugar syrup-white/brown, maple, jams/jellies, even
sweet wine, etc.)... and naturally herbs/spices. Rub on whatever or
combination thereof. Wherever did you get the idea you need oil to
roast/bake.
