Preheat oven to 400. Preheat pan and grease. I was taught the secret is
starting with a hot pan and some grease. We use the grease from the
roast. Mix up l cup of flour with l cup of milk. Add one at a time
two or three eggs. Pour into a hot cast 12 inch iron skillet heated
with about l/4 inch of grease. Do this on a pulled out oven rack so
you can get it back into the oven and the door closed quickly. Cook
twenty minutes at 400, then lower to 350 and cook unil puffed and
lightly brown. If the batter doesn't seem to want to rise, sprinkle it
with hot grease. Keep a small
pot of it on the stove so it is already hot.
