Independence Day Cooking?
 
Anyone doing anything special? Grilling? Smoking? Drinking? ;) I've
been under the weather so I haven't even thought about a menu for July 4th.
On the 5th I get hooked up to a portable Holter monitor (my own personal
echocardiogram) for 24 hours. Haven't thought much about standing out in
the intense heat tending a grill, even though it's the traditional thing to
do. I have some "country ribs" (pork butt) I prepared last month in the
freezer. Maybe I'll just heat those up and figure out something to go with.
All this talk about beans (canned vs. dry, etc.) has me craving some good
spicy beans. Maybe black beans (yes, I'd use canned)... we shall see.

Wow, Jill, what's up? Hope everything's ok. I have a friend in the
neighborhood who had to do that recently, and he found out that his
heart is healthier than most people's...I hope you get the same result!

My husband was going to smoke some ribs, chicken and baked beans on the
4th, to be eaten before the hometown fireworks. But instead, we'll be
going into D.C. to the fireworks on the Mall, with our healthy-heart
buddy and his family. So the smoking project will be scrapped, and I
guess we'll bring a picnic instead...cold stuff...I will have to look at
the recent picnic food threads, because there were some good ideas in
there. Maybe we'll do a few beer can chickens on Sunday...one for
dinner, and a couple for leftovers. They make great cold
sandwiches...thinly sliced chicken breast, fresh mozzarella, some decent
tomatoes from the farmer's market, pesto mayonnaise,...all stuffed and
slathered into a crusty baguette. If the juices and dressing soak into
the bread a little on the way, so much the better!

I look forward to hearing about everyone's holiday meal plans!!

What day is this? LOL Monday afternoon I went to the ER. Presented with
radiating pain in my left shoulder down my arm with the occasional galloping
heart-rate or odd beats. I'd had the shoulder pain for a while and pretty
much chalked it up to "sleeping funny" until these other symptoms presented
and the symptoms got worse. Needless to say, the ER was a waste of time.
They checked my blood pressure and temperature in the first hour. Around
hour 2 they did an ECG. Two hours later, no results from the test and a
shift change. No one had a clue so I left. I saw my primary care physician
the next afternoon. He doesn't think this is cardiac-related but he is
doing the Holter monitor thing just to be sure.

As many people probably know, going to the doctor is like taking your car to
the mechanic. Once you get there, everything is fine. The car will be
chugging, pinging, making odd sounds right up to the point where you get it
to the shop. Then it purrs like a kitten. The Holter monitor will allow me
to follow my normal routine, keep up with what my heart is doing and I can
press a button to mark what feel are arrythmic episodes.

What happened? Did you experience an irregular heartbeat? Have you
had a blood count lately? Anemia can play havoc with your heart rhythm.

Good luck with your 24 hour Holter test. Let us know what the doctor
told you, as soon as you hear. I know that there are many nervous
friends here, waiting to hear the results. Meanwhile, try to relax

Not sure yet - all the kids and grandkids will probably be over - I'll look at
the food ads tonight as see what strikes my fancy. I've been "running down the
freezer inventory so probably steak 1 night, ribs 1 night, and I don't have any
idea one other night. For sure I want some Pantry slaw. My electric smoker bit
the dust so I will probably bite the bullet and get an offset smoker or maybe
another bullet type.

Our neighbors have a huge party each year, with smoked ribs, grilled
chicken, deep fried turkey, and a potluck spread that is amazing. They
also have quite a large bar and a live band. They ask for me to bring
hummus and pita, and Rich makes a salad of some sort.

we're doing grilled ribeyes, grilled corn, and par-grilled and then
baked potatoes with garlic and rosemary. oh yeah, and beer, lots of it
:) the kidlet is excited about the fireworks.

I think we're finally, for once, getting away with just drinking - by
ourselves! My in-laws wanted us to come over (to BBQ, of course) and we
were sooooooooo not into it. We're tired of the parties where everyone
goes, "Is it done yet? Is it done yet?" Anyone who BBQ's knows, it's done
when it's done. We're so tired of getting invited to places just to bring
our cooker and cook.

Anyway, ironically, my husband's step-father's mother just got sick and my
FIL may have to go see her. She's in her upper 90's and lives on the other
side of the state, so you never know about longevity. So, my in-law's event
may be canceled and that means we can stay at home and just be by ourselves!
Yay! Best holiday ever!

I'm not anemic. Irregular (arrythmiac) heartbeat along with pain radiating
from my left shoulder down my left arm.

Thanks, Margaret. I'm sure I'll be fine. The doctor doesn't think this is
truly cardiac but he wants to rule it out. He's also a *gem* of a man who
isn't charging me for this. I'd hate to think this is because I've known
him since the 1970's, before he was a doctor (he's only about 4 years older
than me). My brothers and mutual friends used to hang out with him in his
shag-carpeted Chevy van drinking Boone's Farm Strawberry Hill and listening
to Led Zepplin! :-o

He's actually an excellent physician and I trust him with my life. He
thinks this is merely due to stress but he's taking the time to get the
additional test done just to be sure.

My brother and sister in law just got a new house, so this will be their
first chance to host a holiday (I've done all the hosting for the last 8
years). Grilling is the thing, but we're not sure what yet! lol Probably
simple, burgers or steaks. She makes a mighty tasty ranch, so salad is in
order. Lots. With lots of veggies. hehe. Since the farmer's market is on
Sunday, I'll probably get some green beans and crooked neck squash, maybe
some zuke to grill up with the squash. Mostly, I plan to avoid all sunlight
and make my own version of mudslides for the grown ups.
For a pitcher:
1 pint Double Rainbow Coffee Explosion (or B&J Coffee Coffee Buzz Buzz)
1/4 cup Starbucks Liqueur
1/4 cup Godiva Dark Liqueur
1/2 cup milk
1/2 cup fresh brewed espresso
2 cups ice (approximately)
You may need more ice or more milk, to get the texture you want. Throw
everything in the blender. If you want to get fancy, swirl some mocha syrup
in the glasses before filling.

My brother got a pacemaker put in yesterday. He was nervous about them
stopping his heart, but they say everything went smoothly. I wish I could
get out to MN to see him sooner.

I'll send good thoughts for your brother. My LLL had quadruple bypass in
January, 2004 and he's just fine.

Not at all. :) They are really neat people, with much more money
than we have, but are very down to earth. They do not seem to be as
aware of their wealth as some people we know. If you know what I mean.

We were invited to one of their family dinners after this same party
a couple years ago, and someone toasted them as the most common people
they knew! We have been privileged to go to many of the events at their
home. Anyway, they are a kick in the pants, and loads of fun to be
around. The party starts around 1:00 and goes until the last person
leaves. We are looking forward to it.

Egad. When I went to the ER a few years ago w/ similar symptoms, they
did a quick ECG immediately -- and when it looked ok, they made me wait
around for a few more hours to get more stuff done. But it was ok --
they pronounced it a muscle thing, which is what I figured (I was always
carrying my then-toddler on that arm). I ended up having 6 weeks of PT
on the shoulders/arms/back.

Anyway, I hope everything turns out ok, Jill -- sounds like it will.
And hang on to that doc! He sounds like a gem indeed -- wish I could
find one like that around here. (My dad was a fantastic primary care
doc, but he's been retired for almost 20 years...and he's just too far
away...)

About 8 years ago I went to the ER with similar symptoms. Chest and
back pain, erratic pulse, left arm pain. They did an immediate ECG
which was normal at that time, blood pressure was ok...but they decided
to admit me for additional testing including a stress ECG. Turned out
to be a cardiac arrythmia (?sp) and also gastroesophageal reflux
disease.

Change of BP meds and the addition of some medication for the stomach
took care of the problem...as well as cutting out all caffeine.

Excessive caffeine consumption can also bring that on - that was
partially responsible for my arrythmia problems.

Probably all of the above. We haven't decided on the grilling part for
sure yet, but it will probably involve simple hamburgers, bratwurst, and
hot dogs (foot long, if we can find both the hot dogs and the buns). We've
got stuff for making cole slaw and potato salad to go with the bunned food
items.

Crash plans on smoking a couple slabs of salmon. One for serving on the
4th, and one for sending home with his daughter. She and her boyfriend are
coming over for the weekend. On Monday, her mom and step-dad are coming to
celebrate the day with us and then take the kids home.

We'll probably wash the food down with wine coolers and pop.

This will be a pretty low key fourth, for me. I do have a group of
friends in the SF Bay Area, but so far, only one person in that group
has professed a wish to get together on the fourth. Last year we
barbecued in the chilly clammy SF fog, and the effect was less than
satisfactory. I think I could forgo that this year. =o) My family is
scattered all over the state, so I doubt there will be a get-together
with them.

Anyway, I have a tentative menu planned that will provide some nice
leftovers for a couple of days. I have a single rack of pork spareribs
(Plenty for one of me with leftovers) two ears of corn, and I may make
an apple pie if I get ambitious. Ice cream if I don't feel ambitious.
That should cover the bases nicely.

We are going to a kick-butt party at an estate overlooking the city -
full view of fireworks. I am hoping DS (17 mos) will stay awake long
enough to see them...

Blueberry and Cream Torte
Recipe By :National Pecan Marketing Council
Serving Size : 12 Preparation Time :0:00
Categories : Fruits Pastry
Pecans
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups graham cracker crumbs
1 stick butter -- softened
1/2 cup sugar
8 ounces cream cheese
1/2 cup sugar
2 tablespoons milk
2 cups pecans -- chopped
1/2 cup whipping cream
2 teaspoons sugar
1 teaspoon vanilla extract
1 quart fresh blueberries
1 cup sugar
3 tablespoons cornstarch
Mix 2 cups graham cracker crumbs, 1 stick softened butter, and
1/2 cup sugar together and press into a greased 3-quart
rectangular baking dish. Chill. For bottom layer, cream cheese,
sugar and milk. Spread mixture over graham cracker crust. Top
with chopped pecans.
For middle layer, whip cream, then add sugar and vanilla. Spread
whipped cream over bottom layer. For the top layer: combine
blueberries, sugar and cornstarch. In a saucepan, cook over
medium heat until mixture starts to boil and thicken slightly.
Remove pan from heat and cool. Spread over whipped cream layer.
Refrigerate torte. When ready to serve, cut into squares.

It's not just soda, coffee, and tea with caffeine. Do you eat
chocolate? Chocolate contains caffeine and theobromine, both cardiac
stimulants. Chocolate, coffe, tea and colas are all on my list of
things to avoid. Any coffee flavored, mocha flavored or cappucino
flavored drinks, desserts contain it also. For example - 1 cup of low
fat H=E4agen-Dazs Coffee Fudge Ice Cream has 30 mg of caffeine and Ben &
Jerry's No Fat Coffee Fudge Frozen Yogurt has 85 mg of caffeine per cup
-- the amount in five ounces of coffee. One serving of Devil's food
cake has about 9 mg of cafeine. Triaminicin cold medication, Anacin,
Excedrin, Midol, and Vanquishall have in excess of 30 mg of caffeine
per dose.

For years, scientists at places such as Johns Hopkins, Yale, Harvard,
Duke, University of Michigan, University of California (Berkeley) have
been after the FDA to require adding the caffeine content of foods to

Nope. I lost my taste for sweets back in the 1970's. It's extremely rare
you'll find me eating containing anything with chocolate. I was given an
Easter basket filled with chocolate back in 2001; finally threw the
chocolate away last year LOL

I also don't drink mocha drinks or eat desserts or ice cream on any sort of
regular basis. Maybe twice a year.

When I went to the ER with chest pains I was on the table in the Cardiac
Cath. lab in about 15 minutes. It really was a heart attack,
regardless of what I had been telling myself for several hours. A
little balloon work, 4 grafts, and some rehab I am back to pretty much
normal.

MMM bark and twigs diet, and not much of that.

We are grilling hamburgers and corn on the cob. We'll have some cole
slaw on the side and probably baked beans and/or potato salad, too.
Our new family tradition (two years strong) is to make homemade ice
cream every Fourth of July. Anyone got a favorite chocolate ice cream
recipe?

You be careful and take care of yourself!

Right now, there's a 12.5 pound brisket (at 185° internal) and two
8.25 pound pork butts (internal temps about 168°) with 15 pounds of
spare ribs ready to go on as soon as the brisket is done. All of this
will be saved and re-heated and served with 10 pounds of chicken
thighs and 20 pounds of chicken wings. The rest of the crew is
responsible for bringing the side dishes and the beer.

Last minute plans, as it's just the two of us for the holiday weekend...

Today was a no-cook day as we had many errands and shopping to do.
Hamburgers at a local joint for lunch, nothing special but always good.
Late dinner was a take-out pizza from our favorite pizza joint. It's
always excellent.

We hit a butcher shop, a supermarket, and a farmer's market to pick up
everything for the coming week.

Tomorrow morning I'll bake an apple, cranberry, and walnut pie for dessert.

Most of the time we use our gas grill, but tomorrow we'll grill our 1-pound
ribeyes with charcoal on our small cast iron grill. We'll serve those with
twice-baked potatoes with blue cheese in the mix, along with a platter of
sliced local vine-ripened tomatoes, cucumbers, and cantaloup.

Monday we'll grill locally made spicy hot sausage and german franks, served
with potato salad, coleslaw, and baked beans. I will bake the beans
tomorow and reheat for Monday.

We also bought peaches to make fresh peach ice cream on Monday.

That's more than any two people should eat!
