When I go to the state fair, or baseball games, there are usually
vendors selling sweet roasted almonds. They are coated with some kind of sugar & cinnamon paste. Anyone have any suggestions for how to make these at home? |

Candied Almonds 2 cups*whole almonds *(natural) 1/4 cup honey 2 tablespoons*butter 1 cup*turbinado sugar (sugar in the raw) 1. Spread almonds on a shallow baking sheet. 2. Place in cold oven and then set oven for 350 and roast about 15 minutes, stirring occasionally (watch carefully! they can burn suddenly). 3. In a medium saucepan heat honey and butter over medium heat until boiling. 4. Turn down heat to medium low and simmer for 2 minutes while stirring occasionally. 5. Add almonds and simmer for another 2 minutes, stirring occasionally. 6. Transfer almonds with a slotted spoon onto a greased baking sheet and spread into a single layer and let cool slightly. 7. This recipe is very close and I love to give it to friends for the holidays!" 3=A0cups whole almonds 1=A0egg white 1=A0tablespoon orange juice 2/3=A0cup white sugar 1=A0tablespoon grated orange rind 1=A0teaspoon cinnamon 1/2=A0teaspoon ground ginger 1/2=A0teaspoon allspice 1/4=A0teaspoon salt 1. Heat oven to 275f. 2. In a large bowl, place nuts; set aside. 3. In small bowl, beat egg white and juice until frothy. 4. Add sugar, orange rind, spices and salt, mix well. 5. Pour over nuts, stirring to coat well. 6. On greased cookie sheet, spread nuts so they do not touch. 7. Bake, stirring every 15 minutes until light brown and crisp, 45-55 minutes. 8. Cool completely and store in airtight container in cool place for up to one month. Included one Review: Made these babies last night to take for Thanksgiving...YUM! I toasted mine a bit longer to make sure they have that nice crunch. I loved the combination of spices and orange with the toasted almond flavor. Be careful when you bake them, they go from toasted to burnt in rather a hurry, so stir them often. gloria p |
