CHRISTMAS MORNING COFFEE CAKE
This one I have made and LOVE it!! It isn't just for Christmas. I have given it as a house warming gift, neighbor welcome and used as brunch! Let me know how you like it. Paula Archer http://www.myheartwarmingcreations.com/CountryHeirlooms Buy a 9" or 10" round glass dish suitable for micro waving. Add coffee cake batter (to be refrigerated and micro waved the following morning), or add a bag of ingredients along with nuts and raisins for easy mixing. Attach the recipe and tie the gift with colored cellophane and a nice bow. Make the batter and deliver the gift to a neighbor Christmas Eve, to refrigerate and cook the next day. Give the dish and ingredients to a new microwave owner or as a hostess gift. Or microwave the coffee cake for the annual family Christmas breakfast. 1/3 cup butter 1/2 cup granulated sugar 1/4 cup brown sugar 1 egg 1 cup all purpose flour 1/2 tsp. baking soda 1/4 tsp. salt 1/4 tsp cinnamon 1/4 tsp nutmeg 1/2 cup sour cream 1/3 cup chopped nuts 1/2 cup golden raisins Topping: 1/4 cup brown sugar 1/4 tsp cinnamon CREAM together butter, sugars and egg. Stir together flour, soda, salt, cinnamon and nutmeg. STIR in half the flour mixture, then half the sour cream, beating the mix well. Add remaining flour mixture, then sour cream. Fold in nuts and raisins. SPREAD in greased 9" round glass baking dish. Mix topping ingredients; sprinkle over batter. Cover and refrigerate overnight. MICROWAVE, uncovered, at HIGH 8 minutes, turning if necessary, until moisture disappears on top and cake tester inserted in several places comes out clean. Let stand 5 minutes. |

Well, it hasn't been cooked yet! I've given it to my friends. Myself,
I've never made a cake in the m/w ever -- I'm more of a traditional cake baker! Bron. |

There is nothing like fresh baked corn muffins buttered when still warm from the oven. The taste was fairly good the prep was normal and baking time was under 6 minutes a half dozenb. Most microwave baking recipes require less liquids. -- No Bread Crumbs were hurt in the making of this Meal.
