We went grocery shopping last night, in search of the elusive southern
Minnesota ham hock. No go. We did find a package of three "ham shanks," weighing in at 2.21 pounds for three of them. Hopefully, these will be a good substitute for the nearly-extinct southern Minnesota ham hock. Carol -- Coming at you live, from beautiful Lake Woebegon |

Our pig man brings in smoked hocks, which we use for lentils or split pea soup. Maybe there is a restaurant around there that uses most of them. I imagine if we asked the butcher, they'd probably produce some hocks right on the spot, or order them for a future date. Gotta try that strategy, soon. I think you'll like the smoked pork shanks. Very good flavor...if you can, split them before cooking. Pork shanks are a new item in the meat counter, showing up for the first time just about 3 weeks ago. I made some Canadian pea soup with both pork shank and some salt pork, probably overdoing it a bit, but the flavor was great. IMO, the yellow peas have a better flavor than green peas...the two of us ate an enormous amount of the soup. Mac |
