Default Still No Hamhocks

We went grocery shopping last night, in search of the elusive southern
Minnesota ham hock. No go. We did find a package of three "ham shanks,"
weighing in at 2.21 pounds for three of them. Hopefully, these will be a
good substitute for the nearly-extinct southern Minnesota ham hock.

Nah, I'm going to make split pea soup and lentil soup. Next time we

How can any part of a pig become any more extinct than any other part?
Our pig man brings in smoked hocks, which we use for lentils or split
pea soup.

Maybe there is a restaurant around there that uses most of them. When
I notice that one part of a beast never seems to be there, I always
suspect a chef.

It's weird. We can get pig's feet, no problem (and no thank you). The
shanks look nice. I imagine if we asked the butcher, they'd probably
produce some hocks right on the spot, or order them for a future date.
Gotta try that strategy, soon.

The smoked ham hocks for MN must have been sent accidently to the Bay
Area. :-) The store where I buy meat is overflowing with huge ham
hocks.

I think you'll like the smoked pork shanks. Very good flavor...if you
can, split them before cooking. Pork shanks are a new item in the meat
counter, showing up for the first time just about 3 weeks ago. I made
some Canadian pea soup with both pork shank and some salt pork,
probably overdoing it a bit, but the flavor was great. IMO, the yellow
peas have a better flavor than green peas...the two of us ate an
enormous amount of the soup.

We're that way with split pea soup, too. Thanks to a lot of help from
RFCers and a stroke of genius by Crash, we've got a recipe for a nice,
spicy split pea soup. I've always hated the regular stuff. The spicy soup
is amazing!

I've got a big bag of chana dal ( a gift from Ariane, as I recall), but
haven't tried it yet. I'm considering using curry powder with it, though,
and probably no meat.
