Default "Mirefois"? Spelling query

What is the correct spelling of this word? It's one I hear on the
television from time to time, used to describe a base of (typically)
onions, carrots & celery, sweated gently. I've never seen it in
writing so I've no idea how to spell it. The above spelling produced
just one food-related reference on Google, so I don't think it's
correct; but no other spelling that I could think of showed up at all!

Thanks,
KF

It is mirepoix. It is traditionally 1/2 onion, 1/4 each carrot and celery.
