Refrigerating tahini and nut butters does 2 things - it increases the
usable lifetime, and delays oil separation. It's best to keep such things
refrigerated so that they're freshest. If you want it to be soft, just take
the jar out somewhat earlier, allow it to come to room temperature, and
use. No harm will come to the tahini if you do, and then you can re-
refrigerate. I'd advise against microwaving. It wouldn't take too much
extra time for the tahini to denature if you left it in just a bit too
long, and in addition hot spots would almost surely lead to local
denaturing at one point or another. (Result=foul flavour)
