I was just going to post about the wine chicken I made last night, when I
read A.C.'s post about redneck coq au vin. I can't really call mine coq au vin, because I made it with white wine. And I doubt mine tasted as good as A.C.'s, because I didn't put quite the same effort into it. Still, it was easy and comforting when I needed it. Yesterday was a busy day -- had to take my 18-month-old to visit his his cranio-facial team (doctors, speech therapists, etc. who follow him for his now-repaired cleft palate). We had 7 appointments, were at the hospital for 6 hours, I ignored 5 "No Food or Beverage" signs in the ENT's office, changed 4 poopy diapers, sat in traffic for 3 hours (round trip), came home to 2 more children (hungry ones!) and 1 husband (also hungry). I boiled up some pasta and broccoli for the kids and fed them quickly. Then I threw together chicken (bone-in, skin-on breasts, rubbed with paprika, salt, pepper and sugar) and some white wine in a baking dish. Covered the dish and baked at 350F while I got the kids ready for bed. During the last 20 minutes, put some rice on to steam, and steamed some broccoli and carrots (which I later sauteed in a little butter to reheat). After the kids were tucked in, we tucked into our dinner. The chicken was lovely shredded over the rice, with some of the wine sauce poured over. The veggies were tender-crisp and buttery. It wasn't fancy fare, but it was hot and simply delicious. Dessert was a few of Grace's Best Sunflower Seed Cookies. If you see these in your store, try 'em. They're pretty tasty. Chris |
